Vegan Energy Bars
Ingredients
1/2 cup, whole grain flour
2/3 cup, oats
1 cup, pumpkin flax granola
1/4 cup, raisins
1/4 cup, cranberries
1 cup, shredded coconut
1/3 cup, unsalted almonds (chopped)
1/3 cup, unsalted peanuts (chopped)
2 tsp, ground cinnamon
1/3 cup, unsalted peanuts (chopped)
2 tsp, ground cinnamon
2 tbs, flax seed
2 tbs, quinoa
2 tbs, chia seeds
1/4 cup, warm water
1 1/2 cups, cooked Great Northern beans
1/4 cup, warm water
1 1/2 cups, cooked Great Northern beans
18 dates, chopped (no seeds)
1 tsp, vanilla extract
3 tbs, agave syrup
1 tbs, canola oil
1/2 cup, applesauce
3 tbs, agave syrup

Chop the beans in a food processor. They don’t need to be processed into a puree, just tiny pieces.
Grind the flax seeds, chia seeds, quinoa, and mix it with the water, set aside to thicken for 5 minutes.
Combine all the ingredients together and mix well. Press into a greased baking pan or casserole dish. Bake for a total of 20 minutes at 350 ºF, rotating the pan half way through. Cool completely, then cut into 24 bars.
